Indian meal - Dosa

Dosa

Lekha made this meal for the group.  There are 3 dishes all cooked separately and then eaten together. Serves 20 people.
 
The ingredients and method are listed here:
Dosa:
Mix 3 tea cups of rice and 1 cup of lentils and leave it in water to soak for 3-5 hours; wash them 2-3 times and put some water to blend. Leave it for a few hours(7-8 hours) in a warm place, add 1 tea spoon (of.....). Fry in batches - large spoonful of mixture into the pan - just like making pancakes.
 
Masala:
Boil 3 potatoes; Mix 1 pinch of turmeric powder, 1 chopped onion, 1-2 curry leaves and 1 pinch of fennel seeds and salt. Fry together. Then  add the boiled potatoes to the frying pan and mash everything together.
 
Sambar:
1 chopped onion, 1 chopped carrot, 3 chopped potatoes, 6 chopped green beans, 1 handfull of spinach, 6 okra (ladies finger), 1 teaspoon of salt. Boil everything together. Add some sambar massala.
To make that you need 1 pinch of turmeric powder, 1 teaspoon of coriander, 1 teaspoon of lentils, 4 whole dry chilli peppers, 2 curry leaves and 2 coriander leaves.  Fry all together then blend it to become a paste.
Now add the sambar masala paste to the boiled vegetables. On the top of the vegetables in the frying pan add 1chopped fried onions (fry them separately)
 
Coconut chutney:
Half a fresh coconut, 2 chopped chillies, 3 chopped shallots (tiny onions), a small piece of ginger.
 
Blend the coconut and ginger together. Separately, fry 1 pinch of mustard seeds, 1 curry leaf, add the chopped chillies, shallots and some salt.  Finally add the blended coconut and ginger to the mixture.
 
To serve
Take  one dosa,  put some masala in it and fold it. On the top of it add some coconut chutney, then finally add some sambar on the side. Serve while it is hot and enjoy a very special and extraordinary Indian meal!
