Cold Borsch Soup Recipes

This is a very good soup for summer. My family like it very much.

Ingredients

  • two litres (carton) acidified milk
  • half a teaspoon salt
  • one-two cucumbers
  • two boiled eggs
  • 4 or 5 leaves of Dill
  • 4 Spring onions
  • one cooked medium-sized beetroot
  • half a cup of cream
  • half a litre of boiled water, left to cool

Method

  1. Stir milk and boiled water together in a big bow.
  2. Ffinely chop cucumber, dill and spring onions, add a little salt and stir everything with a spoon.
  3. Add grated cooked beetroot and stir everything together.

Serve with hot boiled potatoes, chopped eggs, bowl of cream on table with Borsch.

For my family, I put eggs and cream into the soup, but not everyone likes eggs and cream.
