Carrot and Beans Thoran

This recipe is from south India. My mother taught me how to cook this dish when I was about 14 years old. Although it’s a vegetarian recipe it is very filling.

  • carrot & green beans – 250g each
  • grated coconut – 1/2 cup
  • green chilli – 2
  • shallot – 5 (or 1 medium onion)
  • garlic clove – 1
  • turmeric powder – 1/4 tsp
  • cumin seeds – a small pinch
  • salt – pinch
  • (black) mustard seeds – 1/2 tsp
  • curry leaves – 4
  • sunflower oil – 3 tspns

Cut the beans and carrot finely and combine together in a bowl. Heat oil in a pan and scatter the mustard seeds. Cook till they pop then add the finely chopped garlc and onion and stir for a few minutes.  Then add the spices, curry leaves & the grated coconut. Fry for another 2-3 minutes (do not let the coconut turn brown). Now add the sliced beans and carrot & a pinch of salt. Combine everything well. Sprinkle 1 tsp of water around the pan & cover and cook it on a low flame till it’s done.
This should be ready in 5-10 minutes.

Notes:
Give it a stir once in between, otherwise it may stick to the bottom. You can increase the amount of coconut if you like. Serve this with Basmati rice.
